My mom has been talking about peanut butter cookies since I’ve moved back to California. So as a dutiful daughter and baker I decided to make her some homemade cookies. I found the recipe from a recipe app on my iPad called Recipebook, but I made a few changes. My mom loves sweet tasting things. Total Time: 25 minutes Cook Time: 8 minutes
1 Cup Unsalted Butter (room temperature)
1¼ Cup Crunchy Peanut Butter (original = 1 cup)
1¼ Cup Sugar (original = 1 cup)
2 Pieces of Eggs
2½ cups of All-Purpose Flour
1 teaspoon Baking Powder
½ teaspoon Salt
1½ teaspoon Baking Soda
(1) In a medium size bowl, mix together the butter, peanut butter and sugar with a large spoon until well blended. Beat in eggs.
(2) In a separate small bowl, sift together flour, baking powder, baking soda and salt. Stir into the peanut butter mixture.
(3) Cover the bowl with a napkin or plastic wrap and place in the refrigerator for 1 hour. After the hour remove from oven and place 1″ – 1½” balls of dough on a baking sheet. Get a fork and press down each ball twice, once vertically and once horizontally. I like to sprinkle a little cinnamon on top before I bake them, but you can skip this step if you just want a pure peanut butter cookie.
(4) Bake at 375 degrees for 8 minutes.
