Chocolate Pistachio Matza and Chocolate Almond Toffee Matza

Dark Chocolate Pistachio MatzaChocolate Almond ToffeeWhile this treat may be the perfect dessert for a Passover dinner, I think it’s a great dessert all year round. Maybe since I never grew up eating matza on a regular basis, when I first tried these crackers plain I thought they were tasty. It reminded me of the saltines I used to get when I was little. However, I learned that when you can really only eat matza for a few weeks every year, you need to find ways to jazz it up. And this is the perfect way. I made these desserts for a Passover dinner and they were a huge hit! People were so excited to have something that wasn’t macaroons. Chances are I’ll be making these again this summer, just because they were so tasty the first time.

Below are the recipes for (1) Chocolate and Toffee Matza and (2) just Chocolate Covered Matza. For some reason, these desserts come out looking like you spent hours on them and they consisted of this incredibly complicated recipes. However, this may actually be the easiest recipe I’ve ever posted.

Spiced Pumpkin Frappuccino

As I’ve said a million times, October is my favorite month. I owe part of that to Starbucks. I’m not that big into coffee, instead I’m much more of a tea type of gal. But I do treat myself to the occasional frappuccino when I’m feeling wild, or in October a pumpkin spiced latte. However, I recently walked into my Starbucks and asked if they could make me a pumpkin frappuccino. To my delight it was possible and was just as tasty as I had dreamed. I was hooked. I wanted them every day. But the steep price of Starbucks just isn’t practical. So I decided to make my own, and they came out delicious!

Peanut Brittle

Peanut brittle was always a staple on both sides of my family. It was my grandmother on my mother’s side favorite treat and I would love going to her house and finding a new container of peanut brittle. My aunt on my dad’s side actually worked for See’s candies (a popular chocolate store out in the West), so if there was ever a damaged container, she got to bring some home. Overall, peanut brittle is a dream to any child who just likes straight sugar and nuts (so just about every child). To appease the children of the world, I encourage all parents to make this recipe immediately!

Chocolate Cream Truffles

Before starting this wonderful recipe, I want to deeply apologize to all the people who read this blog regularly. As some of you know, I started a new job this year and it’s taken up a heavy chunk of my time these last 5 months. I’ve still been baking some treats, but I just haven’t had a chance to come on and post them. I know this year’s resolution was no excuses, so I’m not using this as one. I should have kept up with all of you and I didn’t. I feel like I now know what to expect from my job, and plan on posting regularly again.

So to start off my comeback, I wanted to share my experience at a truffle making class. It was great fun with lots of delicious chocolate for me to make. I’ve tried truffles before, but they never came out just as I wanted them to. So this was a great chance for me to get my questions answered, and deliver you a wonderful way to make truffles whenever you want. I’ve posted a tutorial on How to Temper Chocolate, so definitely check that out. It’s another great thing to add to this truffle recipe or anything that you may want to dip in chocolate.

Salted Caramel Fudge Squares: My Tribute to Starbucks

For all of June and July, Starbucks became my second home. I was actually at Starbucks so much that I would watch the morning baristas clock out and the afternoon ones clock in. They were very tolerant of me taking up their tables for hours at a time, so I’ve decided that my first recipe back will be my favorite Starbucks dessert. If you go to Starbucks they have these salted caramel squares that are absolutely delicious. On the days I needed to treat myself, this was my go to. However, since this is Starbucks, these aren’t the cheapest two bite treats on the market. So I decided to try to make them myself, and I was successful. Keep reading for the recipe….

Raspberry S’mores

If you can’t tell yet, I LOVE raspberries. I actually love any type of berries, so whenever I can incorporate it into a recipe, it’s heaven! I saw on MyRecipes.com, someone had put raspberries into their s’mores and I thought that was a fantastic idea. I also had some extra wood that I needed to get rid of before my big cross-country move. So what better way to get rid of it, by inviting some friends over for a nice fire and some raspberry s’mores! I walked into the Godiva store to pick up my free truffle of the month (one of my favorite things to do each month), and I saw these delicious looking dessert cups in the display. I really wanted them, but as a law student, on loans, the $3 – $4 dessert cup didn’t really fit into my budget. But I thought, “Hey, I could make those!”. And I was right! I love making and eating chocolate ganache, so this was an excellent choice for the Spring Fling Party. Keep Reading
